Apparently eggplant (aubergine) is very healthy. I have done some research and found some recipes. I will get back to you with the outcome.
I have added a daily dose of fish oil for Omega 3. I started with one at night but have been able to increase the intake. I eat tuna, but am working out how to add fresh fish to my diet. It's the smell that bothers me. I read BBQ is the best way to cook fish - perhaps I will try that.

Well darlin', cooking fish on the "barbie" is DEFINITELY the way to go!!! Robert does an EXCELLENT job of it and I prefer it that way MOST of the time if he is willing! Otherwise, I place my salmon (preferred for the omegas) or other faves in a corning casserole with a dab of olive oil and freshly diced garlic and cook for a couple of minutes on each side and VOILA ... an YUMMY and MOST nutritious meal!!!
I shall have to come back to see what you have cooked up with the eggplant. I LOVE eggplant as it has a VERY meaty texture and taste! I will have to try and re-create my fave recipe that I emulated from the Good Earth restaurant here in California YEARS ago - like back in the 70's!!! It was DELISH and a favorite of my children's for MANY years when I could afford to make it for a family of EIGHT!!!
